FREQUENTLY ASKED QUESTIONS:

What food coloring is the best?

I really like to use a gel food coloring for this recipe as it has a more concentrated color and is much more vibrant. You can use regular food coloring as well, you will just need to use more.

What do the egg whites do to these cupcakes?

The egg white really help the cupcakes rise and gives them a nice and fluffy texture. The air evaporates that was beaten into the egg white which helps to accomplish this texture.

What is the best way to frost cupcakes?

There are many ways to frost cupcakes. If you don’t own all the tools for decorating you can do what I did and use a ziptop bag and cut off the tip and frost. You can also spread the frosting on as well. If you have piping bags and tips you can use those as well. Whatever is easiest on you.

Can I make these with cake mix?

Absolutely! Prepare a white cake mix batter using the directions on the back of the box. Separate the batter in half and color one with blue nad one with red and then continue with the recipe as written.

How do I store leftovers?

These can be stored in an airtight container in the refrigerator for up to 4-5 days. They can also be frozen frosted or unfrosted. To do this, place cupcakes in a freezer container where they will keep in the freezer for up to 3 months.
If frosted, let defrost in the refrigerator overnight. If you froze them unfrosted then you can let defrost on the countertop, make your frosting and decorate.
