Homemade Fruit Pizza – The Country Cook

A flavorful and fresh summertime treat, this Homemade Fruit Pizza is made with a sugar cookie base and topped with a creamy frosting and fresh fruits!

A TASTY FRUIT PIZZA RECIPE

This Homemade Fruit Pizza is one of my childhood favorites and gets made all the time over the warmer months. It is super easy to throw together and you can top it with any kind of fruit that you like. What really sets it off is the creamy cream cheese frosting that is spread all over the baked crust. You have a nice little crisp to each bite but it is nice and soft and with the fruit you just have a flavor explosion in your mouth with each and every bite. Looking to wow guests? FREQUENTLY ASKED QUESTIONS:

Do I have to make my own homemade crust?

No. If you do not want to make your own crust you can simply use a packet or sugar cookie dough mix or use the pre-made cookie dough.

Can I add other fruits?

You can add any fruit that you like to this. I like a colorful variety but you can use as little or as much as you’d like. Just make sure that it covers the entire pizza.

Can I make this ahead of time?

Yes, but I would recommend waiting until you serve it to put the fruits on so the pizza itself so it does not get soggy. You can chop the fruits ahead of time and keep them in one bowl or separate bowls so they are ready for you when you serve this. The frosting can also be made ahead of time and stored overnight in an airtight container in the refrigerator.

What size pan will I need?

You will want a 12-inch round pizza pan for this. Do not go any larger or smaller or the crust will not fit or bake correctly. If you do not have this pan you can use a 10×15-inch rectangular pan in it’s place.

Do I need to spray the pan before baking?

Only if you are not using a nonstick pizza pan.

How do I store leftovers?

While this is best served once it is made, you can cover your pizza tightly with plastic wrap and it will keep in the refrigerator for up to 3 days. I do not recommend freezing this.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • salted butter
  • granulated sugar
  • vanilla
  • egg
  • baking powder
  • all-purpose flour

HOW TO MAKE A HOMEMADE FRUIT PIZZA:

Preheat the oven to 350℉. In a large mixing bowl, cream together the butter and sugar with a hand mixer, until light and fluffiy, about 2 minutes.

Add the vanilla and egg, and mix for another 30 seconds. Add baking powder, and flour.

Mix until just combined.

Press the dough into a 12-inch pizza pan, in an even layer.

Bake for 14-16 minutes or until lightly browned. Cool the crust completely before moving on to the next step.

To make the topping, beat cream cheese and butter with a hand mixer until smooth for about 2 minutes.

For the crust:

  • 1 cup salted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 test vanilla extract
  • 1 large egg
  • ¼ test salt
  • 2 spoons baking powder
  • 2 ¾ cups all-purpose flour

For the cream cheese topping:

  • 8 ounces cream cheese softened to room temperature
  • ¼ cup salted butter, softened to room temperature
  • ½ test vanilla extract
  • 2 cups powdered sugar

For the Fruit:

  • ½ cup diced strawberries
  • ½ cup blueberries
  • ½ cup blackberries
  • ½ cup raspberries
  • ¼ cup chopped kiwi, about 1-2
  • 15.5 ounce can mandarin oranges, drained

  • Preheat the oven to 350℉. If using a pizza pan that isn’t nonstick, you’ll want to spray it with nonstick cooking spray.

Notes

  • You can use store-bought sugar cookie dough instead of a homemade cookie dough.
  • Use any fruit that you like.
